You do not need to give up casseroles since its a great comfort food. Plus, easy go-to meals are essential for days when you simply can not be bothered or too busy.

If you’re looking to cook in bulk, it’s great for meal prepping the week’s meals, and you can also freeze your leftovers.

This cheesy ground beef meal requires minimal prep and is ready for the dinner table under 30 minutes. With 54g of fat, 41g protein, and 5.5g net carbs per serving, it will become your favorite creamy low carb dinner.

How To Make Cheesy Ground Beef and Cauliflower Casserole

The first thing we will do is preheat the oven to 400 degrees Fahrenheit.

Cut and slice the cauliflower florets into little pieces and let them boil or steam for 5 minutes or until tender, then set aside.

Cook the ground beef for about 5-10 minutes or until browned. Add salt and pepper and stir together.

Reduce the heat to low and grab your room temperature garlic and herb cream cheese, then add to the ground beef.

Pour in ½ cup of sour cream and ½ teaspoon xanthan gum and stir to combine. Simmer for a few minutes.

Today I’m using mini 6″ by 4″ casserole dishes. You can also use a regular size casserole dish and split the portions four ways when finished cooking.

Add a few florets of cauliflower to each dish.

Spoon in the cheesy ground beef and give a quick stir.

Grate cheddar cheese and finely slice scallions and layer the ground beef keto casserole dish.

Bake in the oven for 20 minutes or until bubbly and the cheese begins to melt and brown.

There is no need to overbake since the ground beef and cauliflower are already cooked.

And as easy as that, our keto casserole is ready and time to tuck in.

The casserole looks fabulous and has a very rich, creamy, and delicious taste. Serve aside with some salad or another serving of your favorite veggies for an amazing dinner.

Ingredients

  • Cauliflower Small
  • Ground Beef 1.5 pounds
  • Garlic and Herb Cream Cheese 170g
  • ½ Cup Sour Cream
  • ¼ Teaspoon Xanthan Gum
  • Salt and Pepper To Taste
  • 1/2 Cup Cheddar Cheese
  • 1 Scallion

Instructions

  9. Bake in the oven for 20 minutes or until bubbly and the cheese begins to melt and brown.

Notes

If your not a fan of beef, you can use any ground meat such as pork, lamb, or turkey.

Use freshly grated cheese instead of pre-packed. Pre shredded cheese can increase carb count and won’t melt as nicely in the oven.

If freezing or meal prepping, let the casserole cool first, then place in freezer-safe containers for up to 3 months.

Adding a pinch of xantham gum will help thicken the juices from the ground beef, sour cream, and cream cheese.

Also, if you’re not keen on cauliflower, you can try using different vegetables such as broccoli, zucchini, or asparagus for your keto casserole.

There are many ways to mix up your keto casserole recipe to suit your taste buds, and here are some ways how.

You can use any meat such as ground pork, lamb, or turkey. Today I’m using 80/20 ground beef to increase fat intake and for convenience.

Be sure to use freshly grated cheese instead of pre-packed. Pre shredded cheese can increase carb count and won’t melt as nicely in the oven.

If freezing, let the casserole cool off first, then place it in freezer-safe containers for up to 3 months.

Although not essential, I like to add a xantham gum pinch to help thicken the juices from the ground beef, sour cream, and cream cheese.

Also, if you’re not a cauliflower fan, you can try using different vegetables such as broccoli, zucchini, or asparagus for your casserole.

Made this with several changes, most notably 1 pound of mild ground pork sausage instead of 1.5 pounds of ground beef, and yellow onion instead of scallions, and smoked gouda goat cheese instead of cheddar. Skipped the xantham gum since our organic cream cheese already had some sort of gum (gellan or whatever). Despite all my fiddling with the recipe, it turned out *SUPER* delicious. Yum, yum, yum, thank you!
