Ingredients You’ll Need

Let’s start with the star players in our keto ground beef and cauliflower casserole. You probably have most of these ingredients in your kitchen already.

Main Ingredients:

• Ground beef: Choose good quality, preferably grass-fed
• Cauliflower: Fresh or frozen, riced or florets
• Onion: Adds a sweet, savory flavor
• Garlic: Because everything’s better with garlic
• Cream cheese: Makes it creamy and delicious
• Heavy cream: Adds richness
• Cheddar cheese: Because cheese is life
• Parmesan cheese: For that extra cheesy goodness
• Sour cream: Adds tanginess and creaminess

Spices and Seasonings:

• Salt and pepper: Basic but essential
• Paprika: Adds a smoky flavor
• Oregano: For a hint of Italian flair
• Thyme: Earthy and aromatic

Step-by-Step Instructions

Now, let’s get cooking! Follow these simple steps, and you’ll have a delicious keto casserole ready in no time.

Prep the Ingredients

• Chop the cauliflower into small florets, or if you’re using riced cauliflower, measure out the amount you need.
• Dice the onion and mince the garlic.
• Grate the cheddar and parmesan cheese.

Cook the Ground Beef

• In a large skillet, brown the ground beef over medium heat until it’s fully cooked. Drain any excess grease.
• Add the onion and garlic to the skillet and cook until they’re soft and fragrant.

Prepare the Cauliflower

• If using fresh cauliflower, steam it until tender. If using frozen, cook according to package instructions.
• Once the cauliflower is tender, mash it slightly with a fork or potato masher.

Mix it All Together

• In a large mixing bowl, combine the cooked ground beef, onions, garlic, and cauliflower.
• Add the cream cheese, heavy cream, half of the grated cheddar cheese, all of the parmesan cheese, and sour cream. Mix until well combined.
• Season with salt, pepper, paprika, oregano, and thyme. Give it a good stir.

Assemble the Casserole

• Preheat your oven to 375°F (190°C).
• Transfer the mixture to a greased baking dish.
• Sprinkle the remaining cheddar cheese on top.

Today I’m using mini 6″ by 4″ casserole dishes. You can also use a regular size casserole dish and split the portions four ways when finished cooking.

Add a few florets of cauliflower to each dish.

Spoon in the cheesy ground beef and give a quick stir.

Bake to Perfection

• Bake in the preheated oven for about 25-30 minutes, or until the casserole is bubbly and the cheese on top is golden brown.
• Let it cool for a few minutes before serving. Remember, there’s no need to overbake since the ground beef and cauliflower are already cooked.

Yield: 4 Servings
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

Ground beef cheesy casserole. Delicious and easy low carb recipe with cauliflower the whole family will love.

Ingredients

  • Cauliflower Small
  • Ground Beef 1.5 pounds
  • Garlic and Herb Cream Cheese 170g
  • ½ Cup Sour Cream
  • ¼ Teaspoon Xanthan Gum
  • Salt and Pepper To Taste
  • 1/2 Cup Cheddar Cheese
  • 1 Scallion

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. The first thing we are going to do is cut and slice the cauliflower florets into little pieces and let them boil or steam for 5 minutes or until tender then set aside.
  3. Cook the ground beef for about 5-10 minutes or until browned. Add salt and pepper and stir together.
  4. Reduce the heat to low and grab your room temperature garlic and herb cream cheese then add to the ground beef.
  5. Pour in ½ cup of sour cream and ½ teaspoon xanthan gum and stir to combine. Simmer for a few minutes.
  6. Get ready your 6” by 4” mini casserole dishes and add a few florets of cauliflower to each.
  7. Spoon in the cheesy ground beef and give a quick stir.
  8. Grate cheddar cheese and finely slice scallions and layer the ground beef keto casserole dish.
  9. Bake in the oven for 20 minutes or until bubbly and the cheese begins to melt and brown.

Notes

If your not a fan of beef, you can use any ground meat such as pork, lamb, or turkey.

Use freshly grated cheese instead of pre-packed. Pre shredded cheese can increase carb count and won’t melt as nicely in the oven.

If freezing or meal prepping, let the casserole cool first, then place in freezer-safe containers for up to 3 months.

Adding a pinch of xantham gum will help thicken the juices from the ground beef, sour cream, and cream cheese.

Also, if you’re not keen on cauliflower, you can try using different vegetables such as broccoli, zucchini, or asparagus for your keto casserole.

Tips and Tricks for the Best Keto Casserole

Here are some handy tips to make sure your keto ground beef and cauliflower casserole turns out perfect every time.

Choose the Right Ground Beef

Opt for ground beef that’s not too fatty. If it’s too fatty, your casserole may end up greasy. Grass-fed beef is a great option for its flavor and health benefits.

Don’t Overcook the Cauliflower

Cauliflower can become mushy if overcooked. Steam it just until tender to keep some texture in your casserole.

Add Extra Veggies

Feel free to add other keto-friendly veggies like spinach, bell peppers, or mushrooms. They’ll add more nutrients and flavor.

Spice it Up

Adjust the seasonings to your taste. Like it spicy? Add some red pepper flakes or hot sauce. Prefer it herby? Throw in some fresh basil or parsley.

Variations to Try

This casserole is incredibly versatile. Here are some variations to keep things interesting.

Mexican Keto Casserole

• Add taco seasoning to the ground beef.
• Mix in some salsa and jalapeños.
• Top with Mexican blend cheese.
• Serve with a dollop of sour cream and guacamole.

Italian Keto Casserole

• Add Italian seasoning to the ground beef.
• Mix in some marinara sauce and mozzarella cheese.
• Top with more mozzarella and fresh basil.
• Serve with a side salad.

Breakfast Keto Casserole

• Use breakfast sausage instead of ground beef.
• Add chopped bacon and bell peppers.
• Top with shredded cheddar and scrambled eggs.
• Serve with avocado slices.

Recipe Tips

There are many ways to mix up your keto casserole recipe to suit your taste buds, and here are some ways how:

• Use Different Meats: You can use ground pork, lamb, or turkey. Today I’m using 80/20 ground beef to increase fat intake and for convenience.
• Freshly Grate Your Cheese: Be sure to use freshly grated cheese instead of pre-packed. Pre-shredded cheese can increase carb count and won’t melt as nicely in the oven.
• Freezing Tips: If freezing, let the casserole cool off first, then place it in freezer-safe containers for up to 3 months.
• Thickening Agent: Although not essential, I like to add a pinch of xanthan gum to help thicken the juices from the ground beef, sour cream, and cream cheese.
• Try Different Veggies: If you’re not a cauliflower fan, you can try using different vegetables such as broccoli, zucchini, or asparagus for your casserole.

  1. Made this with several changes, most notably 1 pound of mild ground pork sausage instead of 1.5 pounds of ground beef, and yellow onion instead of scallions, and smoked gouda goat cheese instead of cheddar. Skipped the xantham gum since our organic cream cheese already had some sort of gum (gellan or whatever). Despite all my fiddling with the recipe, it turned out *SUPER* delicious. Yum, yum, yum, thank you!
