You follow a ketogenic diet, and you have a desire for bread but think it will take too long to prepare a low carb friendly loaf.
Today we have a gluten-free keto microwave bread made from flaxseed, and it takes less than 10 minutes to make from start to finish.
Keto bread can be made using flours such as coconut or almond flour.
We have another easy microwave keto bread, which takes only 90 seconds if you’re after an alternative to flax meal.
This Paleo bread recipe uses a flaxseed or linseed meal, which in the finished method looks similar to whole wheat bread.
One serving of this low carb bread will provide 165 calories, 14.5g fat and just 4g of carbs compared to standard 13-15g carbs for a slice of white bread.
We buy whole flax seeds and grind them up for a few seconds in a NutriBullet. I find it gives a fresher taste compared to pre-ground store-bought varieties, but you can use pre-made to save time.
You will also need a small Pyrex glass square dish, a ramekin, or something similar to make your microwave bread and get that square bread shape.

How To Make Keto Flax Bread
Grab your Pyrex glass square dish and add the butter. Melt it in the microwave for a few seconds.
Crack your egg into the dish and give it a good mix with a fork.
Mix the ground flax seed, salt, and baking powder in a separate bowl and combine.
Add all the mixed dry ingredients, ground flax, salt, and baking powder directly into the baking dish and combine all ingredients thoroughly.
It will turn into a thick texture. Flatten out the surface of the mixture to ensure even cooking.
Cook in the microwave for two minutes.
Leave to cool for a few minutes before taking out.
Use a spatula and gently pull the bread away from the side of the dish. After you turn it upside down, it should come out without difficulty.
Grab your bread knife and cut it in half to make two slices.
You can then add preferred toppings of your choice.
If you can spare an extra few minutes, I’d recommend putting it in the toaster and spreading with butter or cream cheese and eat as a sandwich with a side salad.

I eat this bread every day for breakfast, and frequently for lunch or dinner. There are endless variations on it. I add a tbs. of cocoa and ounce of Torani s f syrup and it makes guilt free chocolate cake. Works great made in a bowl topped with chili, or in the morning topped with fresh fruit and homemade yogurt. I gradually eliminated the added fat, except with the chocolate cake. Just didn’t need it and why add the calories?
Some versions call for 1/3 cup of flax meal and a spoonful or two of water, but substituting the torani syrup for the water adds a lot of flavor. It’s available in limited flavors at Sam’s Club, or in a wide variety of flavors at Smart and Final, very inexpensively. It is pricy at regular stores.
The entire recipe only adds 1/2 gram of net carb.
OK, my note (this is my second morning of making this bread):
1. Please note somewhere that the nutrition information is for 1 serving, not full recipe
2. Not everybody has “a small Pyrex glass square dish”, it would be great to know measurements for orientation (my first dish was too big)
3. I found this advice in other recipe, but if you do not like egg-y taste of the product, add several drops of stevia. Adding 3-5 drops of stevia does not make the bread sweet, but lessens the egg-like taste of bread and makes it taste more like a read bread.
Otherwise I like the simplicity of recipe.
This was brilliant! I added 10g of collagen for added protein and nutrition and I swapped butter for coconut oil and it came out as perfect sliceable, toastable, delicious nutty bread with a great texture and not eggy at all. My new go to (I’ve been let down by so many microwaveable breads in the past: eggy, too dry, too soggy, fall apart, chalky, bland, higher carb etc.)
With the added collagen macros worked out to a perfect 1% carb/ 75% fat/ 24% protein
